Super Bowl Stuffed Peppers

Here's proof you can enjoy Super Bowl snacks and still feel good afterwards! These stuffed peppers are cheesy, protein packed and way lighter than wings.

*Serves 4. Approx. 3 peppers per serving.

12 mini bell peppers

8 oz low fat Laughing Cow cheese wedges

1/2 c low fat shredded cheddar cheese

1/4 c chopped green onions

1/4 c diced tomatoes

1/4 c crumbled turkey sausage (cooked)

1/2 tsp garlic powder

1/2 tsp onion powder

salt and pepper to taste

chopped cilantro (for garnish)

Preheat the oven to 375°. Cut the tops off the mini peppers and slice them in half lengthwise.  Remove any seeds, then place the halves on a parchment lined baking sheet.

In a mixing bowl, combine all of the ingredients and mix well.  Spoon the mixture into each pepper half, filling generously.  

Bake for 15-20 minutes or until the peppers are slightly softened and the filling is hot and bubbly. 

Once cooked, removed the peppers from the oven and let them cool for a few minutes.  Garnish with fresh cilantro for added flavor.
