Try this sweet twist on classic cheesecake! These Strawberry Cheesecake Bites are soft, creamy, and perfectly portioned for when you want something indulgent without blowing your nutrition targets. The crushed freeze-dried strawberries add a bright, real-fruit flavor that takes these to the next level. Keep them in the fridge for a quick high-protein treat after dinner or as a mid-afternoon pick-me-up. Sweet, satisfying, and made with simple ingredients!

Serves 14 bites. 1 bite per serving.

Ingredients:

1 cup strawberry cheesecake (or vanilla) flavored whey protein
3/4 cup coconut flour
1/4 cup crushed freeze-dried strawberries (plus extra for rolling, optional)
6 oz cream cheese, softened
4 tbsp vanilla fat-free Greek yogurt
3 tbsp honey
1 tsp strawberry or vanilla extract

Instructions:

  1. In a medium mixing bowl, beat softened cream cheese until smooth and fluffy.

  2. Add Greek yogurt, honey, and extract. Mix until fully combined and creamy.

  3. In a separate bowl, combine whey protein, coconut flour, and 1/4 cup crushed freeze-dried strawberries.

  4. Gradually add the dry mixture to the cream cheese mixture, stirring until a soft dough forms.

  5. If mixture feels too dry, add 1–2 teaspoons of water or extra yogurt. If too soft, add a small sprinkle of coconut flour.

  6. Roll into 14 evenly sized bites or press into a silicone mold.

  7. Lightly crush additional freeze-dried strawberries and roll or sprinkle each bite in the strawberry crumbs to coat the outside.

  8. Chill in the refrigerator for at least 30 minutes to firm up before serving.

Store in an airtight container in the fridge for up to 5 days.
