Pumpkin Spice Mug Cake (High-Protein, Grab-and-Go)

This mug cake is the one I make on repeat once the weather turns. (If I’m being honest, I use it year-round, but more regularly as we head into September!) It's got the pumpkin spice flavor everyone's craving this time of year, but it's built to actually fuel you - high protein, low carb, and ready in minutes.

The best part? You prep it the night before. Mix it, fridge it, and in the morning it's a 3-minute microwave away from breakfast. No excuses, no scrambling, no skipping meals because life got busy.

Pumpkin Spice Mug Cake

Ingredients:

  • ½ cup pumpkin (1P / 5C / 0F / 25 cal)

  • ⅓ cup egg whites (7P / 0C / 0F / 35 cal)

  • 1 tbsp coconut flour (1P / 4C / 1F / 30 cal)

  • ½ scoop vanilla protein powder (12P / 1C / 0.5F / 60 cal)

  • ½ tsp baking powder

  • ½ tsp vanilla extract

  • Cinnamon and/or pumpkin pie spice, to taste

  • Sweetener of choice (vanilla "sweet drops”, monk fruit or Stevia work well)

Instructions:

  1. Mix all ingredients together the night before in a regular bowl.

  2. Cover and refrigerate overnight.

  3. In the morning, microwave for 2.5–3 minutes.

  4. Top with Greek yogurt and/or a little sea salt, if desired.
